It appears the pre-defined workflow for the AP Bills and Adjustments screen cannot be extended? I'm working in v2021 R1.

Is there a list of the screens whose pre-defined workflows cannot be extended?

Hmmm, interesting, Steven talked about the screens that were extended in 2021 R1 in this video and Bills and Adjustments (AP301000) is on the list:
