I have done some customizations but noticed that options in the left column on the customization screen(s) disappeared. Here is what the options on the left used to look like:
And here is what they look like now. It only displays the "Screens" option:
How can I get those other options back?

Hi Rick, could you please provide some more detail on what you were publishing, additionally, it looks like the 2 pics are of different projects, have you tried returning to the original project to see if your view is still altered?
If your original customisation is simple and easy to replicate, I would suggest unpublishing, deleting, and then starting from scratch.
