I need to be able when creating a new PO number have the system assign the next number based on a number structure that lists the ProjectID-NextNumber for that PO used for that project. Is this possible??

I can't think of how you'd do this with standard Acumatica Numbering Sequences. I think you'd need to do something custom. Keep in mind that the Project on the Purchase Order is actually at the line level so it's possible to have multiple Projects on a Purchase Order.
