I'd like to show Quarters as columns rather than dates in a pivot table.
But when I drag the date to the Columns area of the Pivot Table, I get every single date listed (with the time as well) like this:
I'd like to have the dates combined into only one column for each Quarter. Is this possible?

Yes, this is possible. There is actually a great example in the SalesDemo database that illustrates this.
Basically, for a column that is a date, you can set the Round to property to Quarters and it will automatically set the Format property to "yyyy Q" like this:
Which produces a display of one column for each quarter like this:
