Suddenly Acumatica became inaccessible and throws a "shutdown in progress error".

Is your Instance Acumatica SaaS, hoted in-house, or hosted with a 3rd party?

We are using SaaS, I think it happens because the server in AWS install a windows update and need a restart.

For SaaS they normally send out a notification letting people know when they'll be performing maintenance. Did you get a notification?
