The disassembly process is not the same as an undo of an assembly. It assumes you have physically proceeded with the assembly and then at a future point in time want to physically undo the assembly. As such, you GL or inventory can be left in a different state, eg. Assemble -> Disassemble -> Assemble may give a different outcome than without the Disassemble.
What if there was a data entry issue in the Assembly and we just want to undo it without impacting GL or Inventory (eg. leaving a balance in an account that wasn't there before the assembly or changing an inventory item's unit cost)?
It seems like a glaring omission that there is no undo or reverse option for an Assembly. Anyone else encountered this?

I haven't encountered this, but the behavior that you are describing seems consistent with the "audit trail" functionality that you will find throughout Acumatica. When you post a transaction in any module, it cannot be "undone", only "reversed" which of course is not the same thing unfortunately.

Understand the need for an audit trail. The problem is that if you do a disassembly, your GL and Inventory are left in a state different to that which they were prior to the assembly. In other words, it's not a clean reversal of the assembly process. As such, it doesn't really allow for human error. I believe this is one of the few if only places in Acumatica where there is no clean reversal process possible. It puts great onus on the user to absolutely, 100% ensure that they should never release an assembly until they are 100% sure that it is correct as there is no clean way to go back once its been released. Not exactly user friendly.
