We have a situation where an item has been incorrectly receipted for an overly inflated price (by several magnitudes) and now the max price field on the inventory item is incorrect.
Appropriate adjustments have been made to correct that cost of stock on hand however I would now like to reset the max cost (or omit the invalid price).
Any suggestion of how this can be achieved?

I don't think this can be done. To me a lifetime max cost seems a little pointless anyway. Maybe consider writing your own GI with an appropriate time period?
How did you correct the error if you don't mind me asking? Did you do a Return, or fix it directly in Inventory. I wonder whether a Return would have fixed it (but somehow i doubt it).
ps. I just did a quick check of one of our items and noted that the Max Cost isn't even correct when compared against the Inventory Summary page (item is lot tracked), i can see some lots with estimated unit cost exceeding the Max Cost shown on the item. Another reason to build your own GI so you have much better control over how this statistic is calculated.
I don't know of a way to update it either, aside from maybe trying to update INItemCost.MaxCost in the database.
