You define each segment and the length of each segment for the Account and Subaccount fields by going to the Segmented Keys screen.
There is a maximum length of 10 for the Account and 30 for the Subaccount.:
- Account: 10 digits
- Subaccount: 30 digits
You can have as many segments as you want in both the Account and Subaccount fields, as long as you don't exceed the total length limits of 10 and 30.

Just a few more comments about the Account and Subaccount fields:
- Account and Subaccount are completely disconnected from each other. Many people are used to other accounting systems where you define what Subaccounts are valid for each Account, but Acumatica doesn't work that way. You just define a list of Accounts, then a list of Subaccounts. You can sort of accomplish the "which Subaccounts are valid for which Account" thing by using Row-Level Security, but it isn't very clean in my opinion.
- If you'll notice from the screenshots above, you can have segments in the Account field as well as the Subaccounts field. This is another way to accomplish the "which Subaccounts are valid for which Account" thing by only defining segments in the Account field and not even using the Subaccounts field. Keep in mind though that you maximum length is only 10.
- Also keep in mind that the previous point doesn't work that well if you're using any modules outside of the Finance modules because you have a lot more control over how you default values into the Subaccount field, as opposed to the Account field. In the Sales Orders module for example, you can default the Product Category into a Product Category segment in the Subaccount field, then the Customer Type into a Customer Type segment in the Subaccount field, but you can only default one thing into the Account field (you can't break it down by segment).
- You don't have to have a complicated Chart of Accounts if you leverage the dimensional reporting capabilities in Acumatica to do more reporting by drilling back into the Subledgers for the data rather than trying to put it all in the General Ledger.

You make a good point about not having a complicated Chart of Accounts. It's great to know that Acumatica can handle a lot of segments, but bigger is not always better. I'm actually working right now on simplifying our Chart of Accounts before we convert over to Acumatica, but I wanted to make sure that I wouldn't run into any limitations. And it looks like I won't!
