I am trying to find all Activities that are linked to a Lead or Opportunity. I've found different "Activity" related tables but not sure which is correct and how they link to an Opportunity or Lead. Any direction would be appreciated.

You would want CRActivity.RefNoteID and link it to the NoteID of the Opportunity or Lead.
